A soft recipe for making kebab skewers with vegetables and sauce

To mark the opening of ‘BBQ season’ and ‘picnics’, Teff Food chain presents a delicious recipe for making vegetable kebab skewers with sauce.


Kebab making ingredients:

Half a kilo of minced lamb

1 large white onion, finely chopped

1 cup chopped herb mixture – parsley, cilantro and mint

3 tablespoons olive oil

1 teaspoon fine salt

1 teaspoon black pepper

1 teaspoon spice

To make the salsa sauce:

2 cups chopped herbs – parsley, cilantro, mint, dill, green onion

1 hot green pepper, finely chopped

½ cup finely chopped olives

3 crushed garlic cloves

Juice and peel of one lemon

3/4 cup olive oil

1 teaspoon atlas salt

To make the skewers:

2 packages romanian artichoke slices

bunch of asparagus, cut into 5cm sections

to prepare: Mix all the kebab ingredients and put in the refrigerator for half an hour – an hour. In a bowl, mix all the ingredients for the sauce, and leave it to marinate in the refrigerator for two hours to a full night.

Using your wet hands, make a kebab 5 cm long and 3 cm thick. Skewer on a skewer alternately 3 kebabs with slices of artichoke and asparagus. It is placed in the refrigerator for an hour.

Heat the grill over high heat and grease the kebabs with olive oil. Grill on a greased grill for 5 minutes on each side for a degree of megawatt. and present. Serving: Pour 1-2 heaped tablespoons of the sauce over the kebabs.
