to prepare:

Preheat the oven to 180 degrees. Start preparing the filling, mix all the ingredients in a bowl (if the sweetness is not enough you can add more cinnamon and sugar). Refrigerate until used.

Prepare a skillet with baking paper. Open the thawed dough and roll it a little. Using a spatula, spread the filling in a thin layer over the dough.

Fold the dough lengthwise, then roll it out again to absorb the filling. Using a pizza roller, we cut the dough lengthwise, then form triangles.

Roll each triangle into the shape of your mat and place directly on a baking tray lined with baking paper. Spread the roulade with the scrambled eggs, and sprinkle a little brown sugar on top. Put it in the oven for half an hour, until it turns golden.

Meanwhile, make the sugar syrup, in a small saucepan, bring the sugar and water to a boil, reduce the heat a little and let it boil gently for another five or six minutes, until a thick consistency is obtained.

As soon as you take the rugs out of the oven, brush them with sugar water.

Additional comments:

  • You can make larger rolls and not cross the dough in the middle.
  • The filling can be made into any spread you want.

the components:

4 cups sifted flour
1 tablespoon dry yeast
1/2 1 cup lukewarm water
2 teaspoons salt
2 tablespoons olive oil

For extras:

minced garlic
Hyssop / herbs
Cherry tomatoes/sun-dried tomatoes
Feta cheese (Bulgarian) / Parmesan
chopped olives
coarse salt

to prepare:

1. Preheat the oven to 180 degrees

In the bowl of a stand mixer using the kneading hook or by hand, process all the dough ingredients together, except for the olive oil. When the dough begins to hold together into a dough, add the oil and continue to process until a uniform and pleasant dough is obtained.

3. Cover the dough with a towel and let it rise for 10 minutes. If you are not in a hurry, it is recommended to give additional swelling until the volume doubles.

4. Grease your hands with a little olive oil and open the dough, then arrange it in a square pan or divide it into individual portions in the shape of a square or oval.

5. Drizzle a little olive oil and sprinkle with crushed garlic, hyssop, coarse salt and your favorite toppings. Then bake in a preheated oven at 180 degrees, until the edges of the focaccia are brown.

Tips: Do not make the pancakes too thick, the thinner they are, the more airy the dough will be

Can be varied with any other favorite topping, such as: Jamba Slices, Pesto, Sweet Potatoes and more.

Pretzel recipe

the components:

5 cups (700 g)
Wheat flour
1 and 1/2 cup (360 ml) hot water
2 tablespoons brown sugar
1 and 1/2 teaspoon (7 g) baking powder
85gm melted butter
3 teaspoons salt 2 liters water
120gm of baking soda/vegetable milk/egg for brushing pretzels
For decoration: coarse salt

to prepare:

1. Pour yeast, sugar and butter into the bowl of a mixer. Add hot water and mix until you get a homogeneous mixture. Leave the dough aside for 5 minutes.

2. After soaking, carefully add the flour and salt. Set a low speed for a few minutes and gradually speed up. Knead the dough well with your hands for another 5 minutes. Make a ball of dough and place it in a greased bowl. Leave the dough in a bowl until doubled in size. You can use the fermentation function of the oven for this.

4. Stretch the dough until you get a rope about 50 cm long. You can form the shape of a pretzel.

Boil 2 liters of water and add baking soda. When the water is ready, reduce the heat. Put each cracker in the water for about 20 seconds. Remove the pastries from the oven and place them in an oven dish lined with baking paper.

Grease the pretzels with the vegan milk/egg and sprinkle coarse salt over them. Then bake in the oven for 15-17 minutes at 220 ° C, until golden.
