Haman’s ears in disguise at Purim: three recipes you won’t see anywhere else

We have already heard about special recipes for aphids: those with halva, milk jam, fruits, pistachios, even peanut butter and jam, but have you heard about aphids? Mostly not. This upcoming Purim holiday, we’ve found for you three non-routine recipes that will take the hamman you know out of the box and surprise you and your guests with flavors you didn’t know.

Ingredients (for about 15 ears of mana):

  • Preheat the oven to 180 degrees and put baking paper in the pan.
  • Heat olive oil in a frying pan and add chopped onions. Fry until golden, add mushrooms and green onions.
  • Stir for a few minutes, until the mushrooms are tender. Remove from heat and cool slightly.
  • Mix cheese, salmon and spices in a bowl. Open the pizza dough and make circles with a diameter of 8 cm.
  • Put a teaspoon of the filling in the center of each circle and close to forming a manna ear.
  • Put them in a frying pan, brush with eggs and sprinkle with sesame mixture. Bake for 15 minutes until golden.

Ingredients + method of preparation:

  • Take a pound of fresh ground beef (I ground my neck because I wanted it to be greasy)
  • Add a chopped purple onion
  • Handful of chopped parsley
  • A handful of toasted pine nuts
  • Two teaspoons of salt, one teaspoon of cumin, one teaspoon of allspice and one teaspoon of black pepper
  • Mix everything into a union
  • Take the pita bread and open it in two
  • Place in the center of each pita of the meat mixture and fold in the shape of an ear of manna
  • Clamps on the edges
  • On a gas grill or in a frying pan, place the pita bread on the side of the folds for about 4 minutes to toast
  • Spread the whole part with olive oil and leave it for another 2-3 minutes
  • Served with ambala and arissa tahini

For the dough:

  • 400 grams (3 cups minus 2 tablespoons) flour
  • 1 teaspoon Shufersal dry yeast
  • 1 and 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon shofersal honey
  • 1/3 cup chefersal olive oil
  • 1 tablespoon vinegar
  • 3/4 cup (180 ml) lukewarm water
  • canola oil spray

For the filling:

  • 600 grams of frozen spinach medallions
  • (Option: add 1/2 steamed purple onion and 1/2 cup cooked chickpeas)
  • 150 g bulgarian shfersal cheese
  • 100 gm gouda cheese, shredded gouda cheese
  • Mozzarella cheese slice
  • A handful of baby mozzarella balls
  • Nutmeg, salt and ground pepper to taste
  • 1 tablespoon olive oil

How to prepare:

  • Put all the dough ingredients in a bowl and knead well until you get an elastic dough
  • Spray the top of the dough with a little oil spray, cover and swell for an hour and a half
  • Defrost spinach, possibly in the microwave. Squeeze a little of the excess liquid from the spinach and put it in a large bowl
  • Add Bulgarian cheese, gouda, nutmeg, salt, pepper and olive oil to the spinach and mix.
  • Spray your work surface with a little canola oil spray. Put the puffed dough on the surface and roll it into a large plate about 50 cm in diameter
  • Place the mozzarella slices in the center of the dough sheet and pour the spinach filling over the mozzarella cheese. Put the mozzarella balls on top of the spinach
  • Brush an egg on the dough sheet that remains uncovered around the spinach filling and closes in the shape of a manna ear
  • Transfer to a large skillet lined with baking paper
  • Spread the eggs and sprinkle generously over the sesame seeds
  • Leave it to rise for half an hour
  • Preheat the oven to a medium/high heat of 200 degrees on the turbo program and bake for 30 minutes or until browned
