Especially tasty and healthy pampering recipe for the holiday table or to entertain during the week


Ingredients (4 people)

2 large sweet potatoes

1 small onion chopped

1 small apple, chopped

2 cloves garlic, crushed

Cooked / canned chickpeas

2 teaspoons top of the store

2 teaspoons honey

Handful of coriander, finely chopped

salt

ground black pepper

To prepare the sauce:

200 ml coconut cream

1 teaspoon smoked paprika

salt

to equip:

Rinse the sweet potatoes, cut them lengthwise and put them in the oven for 30-40 minutes at 200 degrees until cooked.

Meanwhile, fry the onion and apple a little in the oil for 3 minutes, add the garlic and continue to fry for 4 minutes.

Add chickpeas, season with berries, stock in salt and pepper, and fry for another 5 minutes. Add honey, saute a little, remove from heat, sprinkle over coriander and set aside.

For the sauce: Mix the coconut cream with the paprika and a pinch of salt.

To assemble the dish: Screw a long hole inside the sweet potato and fill it with the chickpea mixture, garnish with a dollop of the sauce and sprinkle the rest of the cilantro over it.
