“I would have gone vegan if it wasn’t so hard,” is the familiar and familiar phrase we always say, whether it’s because there aren’t enough alternatives or because the alternatives are too expensive. But what if we said we had a few recipes that would make for a delicious, healthy, and even easy-to-prepare vegetarian meal? We open it with a first course of eggplant stuffed with cabbage and mushrooms, we continue with the main course of grilled cheese, apples and caramelized onions, and we finish with oatmeal, bananas and chocolate biscuits.
Stuffed grilled anbeltini
Ingredients:
1/2 medium size eggplant
1 piece of cabbage (about 100 grams).
100 grams of different mushrooms, as desired
1 bunch fresh parsley
1 clove garlic
Salt and Pepper
olive oil
directions:
Finely chop the cabbage and mushrooms and fry in a pan with a little oil, salt and pepper until soft.
Chop the garlic and parsley and add to the skillet for another five minutes.
Stir until the filling becomes sticky and set aside.
Cut the eggplant into thin slices and cook on the grill until golden brown.
Put a little filling on each eggplant slice and roll.
Serve in a large platter on a bed of spinach and pumpkin seeds with your favorite dressing.
Caramelized cheese sandwich, apple and onion
Ingredients:
Sandwich bread as desired
vegan cheese slices
1 apple
1 onion
2 teaspoons coconut sugar
1 teaspoon olive oil
directions:
Rinse and cut the apple without the seeds.
Bake for 15 minutes at a temperature of 180 degrees.
Cut the onions into thin slices and fry over low heat in a frying pan with olive oil until browned. When the onions are softened, add the sugar and cook for 20 minutes or until the onions are brown and soft.
Make the sandwich with caramelized onions, a few slices of vegan cheese, and a cooked apple, to taste. Place the bread on the grill and cook until the bread is golden and crunchy.
Oatmeal, Banana and Chocolate Cookies
Ingredients:
cup oatmeal
2 ripe bananas
Half a cup of chocolate chips
Half a teaspoon of vanilla extract
directions:
Mash the bananas in a bowl using a fork or mortar without the peel.
Add the vanilla extract and oatmeal and mix together until smooth.
Add chocolate chips and mix.
Shape the cookies and place them on a tray covered with baking paper.
